Forks Over Knives examines the claim that most chronic diseases can be controlled, or reversed, by rejecting animal-based and processed foods. The film traces the journey of two pioneering researchers. Dr. T. Colin Campbell, a nutritional scientist at Cornell University, found in the Philippines that wealthier people, who consumed relatively high amounts of animal-based foods, were more likely to get liver cancer. Dr. Esselstyn, a top surgeon and head of the Breast Cancer Task Force at the world-renowned Cleveland Clinic, found that diseases he routinely treated in the US, were virtually unknown in cultures where animal-based foods were rarely consumed. These discoveries inspired Campbell and Esselstyn, to conduct several studies. One taking place in China is still among the most comprehensive health-related investigations ever undertaken. This research concluded that degenerative diseases like heart disease, type 2 diabetes, and even several forms of cancer, could almost always be prevented—or reversed—by adopting a whole-foods, plant-based diet.
